The weekends have become my time to mess with some basic recipes to build up my cooking repertoire. I’ve tried this recipe a few times and it is amazingly simple and delicious. You can find the version I use on About’s Vegetarian Recipes.
1/3 cup vegan margarine
1/2 cup sugar
1 cup white flour
1 cup white wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2 very ripe bananas
1/2 cup soy milk
1 tsp vanilla
1 tsp cinnamon
Preheat oven to 350 degrees.
Mix sugar and margarine until creamy.
Stir in flour, baking soda, and baking powder.
Mash the bananas in a separate container.
Mix the bananas with the vanilla and soy milk.
Combine for a fairly wet batter.
Bake for 40-50 minutes.
I don’t have a picture for the next part of our meal, but we also had some excellent Cabbage and Soyrizo Soup. For this, I used a recipe on India Divine and then just kind of adapted it, I barely changed it though.
1 clove garlic
6 cups water
2 tbsp olive oil
1/2 package of soyrizo
3 cups chopped cabbage
Chop onion, potatoes, and garlic.
Boil in water until potatoes are soft.
Separate boiling liquid and mash potato mixture.
In another pan use heat up olive oil and add cabbage.
Carefully remove soyrizo from casing and crumble into the cabbage, stirring until slightly soft.
Next add in the saved liquid and bring to a boil for three minutes.
Turn off the heat and then add in the potato mixture.
Needless to say, we had yummy food today!
